Constructively, all of the tools you have mentioned have the ability to do the job in a  rock solid fashion.

Some differences:
	1) The underlying technology used to provide the virtualisation - OpenVZ/ OS based virtualisation versus hypervisor based virtualisation.
	2) The tools provided around them - Vmware vCenter for example versus a vanilla Xen or KVM hypervisor.

Specifically with what has been mentioned though Xen can be extremely good for providing isolation. OpenVZ style there is more chance of one instance being able to effect another instance. There are a tonne more pro’s and cons for hypervisor versus OS level virtualisation but Google can help you with that.

The restrictive thing with Vmware can be the cost.

AWS state EC2 is Xen powered.
