Like everything, you get what you pay for and there's no point paying for
performance you're not using and never will.

Doesn't sound like you need anything high performance, so a couple of
drives sounds fine. When/if performance becomes an issue, you'll have a
better idea of your IOPS and can design accordingly.

Another option might be cheap SSDs - eg:
