So considering NSWIX shows the aggregate for the exchange at 40Gbps or so at present, and Netflix is responsible for approx 5% of it, and as NSW is fairly representative of the rest of the nation give or take....

My question is....
Does that mean Netflix is currently 10% of all Australian Internet usage at this point in time?
That’s a drastic oversimplification of reality and results in a very flawed number. The primary thing that you are not considering here is that network operators do not exchange traffic with high volume peers via public IXes. These are moved onto private peering links very quickly and you usually never see numbers on traffic on those. Thus you cannot read what you are trying to from the NSW-IX stats - there is a huge amount of traffic going via private peering links as well as local caches.
