Most of you have been correct in your responses :D which is great i appreciate everyone whom has replied to me,
Ive now managed to get this setup, and needing the customer to test from their end so lets see how we go :D

Should be the same as delegating a sub-domain, or a /24 out of a /16 - put the NS records into your zone for the sub-zone(s) ?
aka say you have 2400:1234/32, and you have punted 2400:1234:56/40 to your customer
You have a DNS zone for 4.3.2.1.0.0.4.2.ip6.arpa.
In there' you'll have the following entries:
6.5 IN NS ns0.customer.com.
6.5 IN NS ns1.customer.com.
And your customer will then configure a zone for 6.5.4.3.2.1.0.0.4.2.ip6.arpa on their DNS servers.
Well, pretty sure that's it.. Someone who's done more IPv6 will surely pipe up if I'm wrong :)
