if your running a global operations, then your saying stop working by 10am
Friday Sydney time which is 5pm on Thursday Pacific time. That becomes hard
to do, especially if your network operates all over the world + many
carriers schedule their work / outages on Saturday/Sunday nights. Is
weekends off a realistic option for an operations group?

I used to do global networking for a company that started in Hawaii back in the 90s called Digital Island.  The world's day ends at Hawaii (as far as major populations) and begins in NZ, so the weekend is shortened, but you can stop at 10am Hawaiian time and you don't have to start until Sunday 5pm Hawaiian time, when it's 8am Monday in NZ.
