Okay so If I rephrased that to say

Corporate LAN.  No WAN links. Think alteast 1G switches

QOS – should QOS handle larger sized packets ?

Yes, QoS and fragmentation on WAN links. Serialisation delay on anything < 5mbps will kill voice/low latency traffic.
