Apart from the extra CPU when it crunches the routing table when BGP session comes up/down you shouldn't expect any higher CPU just from having full tables. CPU will still be dependant on the amount of traffic you're pushing through the box.

We are doing about 300 mbit  at peak and at 35% CPU how much extra head room do you think I have once we take full tables ?

It will very much depend on the throughput that you are pushing through them.

Convergence will take a few minutes, but for the most part, they should be fine.
